Georgia’s qvevri tradition stretches back some 8,000 years and survives not as an archaeological curiosity but as a living form of winemaking recognised by UNESCO. In Kakheti’s Alazani Valley, grapes continue to ferment and mature in clay vessels buried beneath the cellar floor. Rkatsiteli, Kakhuri Mtsvane, Khikhvi and the exceptionally rare Chitistvala become amber wines through extended skin contact, while Saperavi provides the red.
