– Soil: Clay and limestone

Winemaking process
– Harvest: September
– Hand-harvested, rigorously sorted, into 20 kg crates.
– Fermentation vessel: 150-year-old concrete vats
– Fermented with indigenous yeasts, then followed by malolactic fermentation
– Ageing apparatus: 8 months in old French casks
