– Agricultural method: Organic certified, in conversion to biodynamic (Demeter from September 2021). Zero spraying in the vineyard, not even cupper or sulphur.

Winemaking process

– Harvest date: beginning to mid-october

– Harvested by hand in boxes of 15kg

– Destemmed and crushed

– Fermentation vessel: stainless steel

– Maceration Time: 25 days maceration on the skin (3 Punch Downs/day)
