A beautiful golden colour with green highlights. The fine, persistent mousse sets it apart from other sparkling wines, while the nose is refined and concentrated. Citrus, peach and Mediterranean herbs unfold over notes of brioche and fresh bread dough. Bone-dry, elegant and precise, with refreshing acidity, pronounced minerality and a long, remarkably clean finish.

Winemaking

The biodynamically farmed grapes are harvested by hand. The wine is produced by the traditional method, with the base wine fermented in stainless steel and a second fermentation in bottle. It spends 36 months ageing on the lees and is finished with zero dosage. Bottling is carried out according to the Maria Thun biodynamic calendar.
