Vineyard Information
– Location: Bsharreh mountains at the foothills of the millenial cedars (Merweh) and the hills of Zahle (obeideh)
– Soil: Clay and limestone
– Altitude: 1400m (Merweh); Zahle hills (1100 meters)
– Trellising System: bush vines (Merweh), Pergola (Obeideh)
– Year the vines were planted: first half of the 19th century (Merweh), 1970s (Obeideh)
– Agricultural method: Organic non-certified
Winemaking process
– Harvest: end of Spetember (Obeideh), October (Merweh)
– Hand-harvested, rigorously sorted, into 20 kg crates. Merweh vineyards: several rounds are needed to obtain perfect ripeness.
– pre-ferementation maceration of 24 hours
– Fermentation vessel: stainless steel with indigenous yeasts
– Ageing apparatus: kept a few months in stainless steel tanks after belnding
