In Neerheylissem, Wallonia, Patrick Carmans and Katrien Vanderschot make natural wine under Belgium’s demanding cool-climate conditions. Their Chardonnay is grown without synthetic vineyard chemicals and fermented spontaneously with native yeasts. The collection presents two contrasting expressions: Vîs Tchapias, a precise white marked by minerality and vivid acidity from the Poupouye vineyard, and the long-macerated Ishikawa Orange.
