Piquentum
French-Croatian winemaker Dimitri Brečević studied oenology in Bordeaux and worked across several wine regions before settling in his father’s native Istria. He founded Piquentum beneath the hilltop town of Buzet, inside a former 1928 water cistern whose naturally cool temperature encourages exceptionally slow spontaneous fermentations. Malvazija Istarska, Teran and Refošk are made without cultured yeasts, enzymes or other winemaking additives.
